Mike Joyce Mike began his
culinary training at the Westminster Technical College in London, England,
where he completed his Journeyman Cook’s Certificate. Mike gained his work experience by
working in some of Europe’s finer hotels, including Claridge’s Hotel
(London, England), The Royal Savoy (Lausanne, Switzerland), and the Hotel
Bayerischerhof (Munich, Germany).
Moving to Canada in 1974, Mike continued to build on his experience working in well established Vancouver restaurants, including The Treehouse Restaurant in Stanley Park, and the Vancouver Alpen Club, where he was the Executive Chef. For the 16 years prior
to owning the Lunch Doctor, Mike was the Executive Chef at the Vancouver
Lawn Tennis & Badminton Club, where he was responsible for the daily
operation of the kitchen. He also took on the initiative of organizing
events such as the “Mardi Gras” and “Carnival in Rio” Ball Galas, as well
as Christmas Luncheons and Sunday Dinner Buffets; all becoming successful
annual events, with approximately 250 members in attendance. After purchasing
the Lunch Doctor in August of 1993, Mike was able to fulfill his dream of
owning a catering company.
This opportunity has allowed him to use his culinary experience and
creativity to prepare world-class meals for all functions. Working closely with his clients,
Mike is able to create a menu & flavor that is well suited to each
private function.
